When you Add a new customer, Contact or Fiscal Entity and fill in the contact data for that customer, you have a checkbox field that denotes a contact as being the primary contact data on a customer, like primary adress, primary phone number, primary e-mail or the main contact person. 

For example, for Contacts, your primary email, phone, etc will appear in the contact list.
